Apple & blueberry cottage-cheese cake



Is it possible to get a healthy but delicious cake...? Yes, it is! 

Lately I've been looking for lighter versions of my cakes and bakings in general. You can get to this point by reducing the amount of sugar (with other ingredients like apples, pears, banana, and so on) or changing the kind of fat in these cakes. I have a lot of fun researching and testing the recipes in these new versions (I must say that is not as easy as it sounds, because as you all know, sugar and fat, as well as proteins and so on... Have an important "paper" in the develop of the future dough, so, it's not that easy though...) 

This cake is one of those ones. A dense, smooth and delightful cake that will be a nice treat to all our family.




There's no mess possible in this cake. It's all about whisking, cutting and baking... Easy peasy! 

You will need for a 6-8 people cake (it depends on the size of your portion...)

50 ml. olive oil (It can be substitute for veg oil)
50 grams. light brown sugar
2 M eggs
120 grams. Whole wheat flour 
1 tsp baking powder
150 grams. Blueberries (better fresh)
60 ml. Milk (almond, coconut...)
65 grams. Cottage cheese
1 big apple= 200 grams (peeled, cored and sliced)



Method:

  • Preheat oven to 160ºC Fan/ 180ºC
  • Grease a 20 cm spring form pan/mold.
  • In the bowl of your stand mixer whisk the olive oil and sugar.
  • Add the eggs, one at a time.
  • Add the milk (it has to be warm, so if it's not heat it up just until warm) and the cottage cheese.
  • In another bowl sift flour and baking powder.
  • Add the flour into the wet mixture. Mix well.
  • Add the blueberries and half of the sliced apple. Mix well with a spatula.
  • Pour the batter into the tin and on top place the remaining blueberries and apples.
  • If you want to, you can sprinkle some brown sugar on top.
  • Bake for 35-40 minutes or until the skewer comes out clean. (mine was for 40 min in the oven)
  • Take it out of the oven. Remove the cake from the pan/mold.
  • Allow it to cool on a cooling rack.
  • Serve plain, with a dollop of clotted cream, custard, ice-cream...
