Whole wheat Pear cake



I love to use fruit in my bakings. It's a nice way to reduce the amount of sugar, and add lovely flavors and scents. 

This pear cake is amazingly beautiful. It has pear, whole wheat flour, olive oil... Just the perfect “healthy” treat you are looking for. If you don’t like the “strong” flavor of the olive oil you can change it for regular veg oil.
I used Greek yogurt, but if you don’t want dairy in your bakings use applesauce instead. The texture wouldn’t be the same (will be more dense and compact) but if you don’t mind, change it!

It's very easy. I could say that it a "put all the ingredients together" kind of cake.

Lets go with the recipe.




You should need:

  • 160 grams. Whole wheat flour (I used eco)
  • 1 1/2 tsp baking powder
  • 1/4 tsp baking soda
  • pinch of salt
  • pinch of nutmeg
  • pinch of cinnamon
  • 2 eggs (M)
  • 100 ml. Olive oil 
  • 100 grams. sugar (you can use brown sugar instead)
  • 170 grams. Greek yogurt 
  • 2 pears
Method:
  • Preheat your oven at 180ºC fan
  • Whisk sugar with olive oil. 
  • Add in greek yogurt, and the eggs (one at a time)
  • In a bowl place the dry ingredients: flour, baking powder and baking soda, spices, salt.
  • Add dry ingredients into the wet ones. Mix to combine (don't over mix)
  • Peel, cored and cut the pears: one pear into small chunks. The other one in quarters to put on top of the cake.
  • Stir in the batter the pear in chunks. Mix well.
  • Pour the batter onto a baking tin foiled with baking paper.
  • Place the other pear on top. 
  • Bake for 35 minutes (until the skewer is clean)
  • Take it out if the oven and allow to cool on a wire rack.
  • This cake is lovely with a scoop of vanilla ice cream, or cream, yogurt, custard....
