You’re about to make the easiest cake ever (among others...) You’ll just need to put all the ingredients together and... Bake! It’s a soft, moist cake with a delicious orange flavor You’ll love it.
I topped the cake with a light syrup with an orange scent. Just the perfect finish for this amazing cake.

Ingredients:
230 grams butter at room temperature
350 grams sugar
3 M eggs
1/2 tsp vanilla paste
3/4 cup buttermilk
400 grams flour
15 grams baking powder
150 grams dried cranberries
2 Tbsp orange zest
1 tsp orange extract
For the sugar frosting:
2 Tbsp powdered sugar
1 tsp of orange juice
You just have to mix sugar and liquid until you get the consistency you want. I wanted it thick, so i used less liquid. If you prefer it with a runny texture, just add more liquid.

Method:
- Preheat oven to 180ºC
- Sift flour and baking powder.
- Chop the cranberries (not too big)
- In the bowl of the standard mixture whisk butter and sugar until fluffy.
- Add eggs, one at a time until all well incorporated.
- Add buttermilk and mix.
- Add orange zest and vanilla.
- Stir in the flour and just mix well (don’t over work)
- Add the dried fruit and mix. Just mix.
- Pour the batter into the prepared baking tin (greased)
- Bake for 40 minutes. If you feel the temperature is too high, reduce it to 150ºC FAN (it’s enough for me in my oven)
- Take it out of the oven. Let it cool down for 10 minutes and then take to out of the baking tin.
- Make the “sugar frosting” and pour all over the cake.Let it dry completely.
