
Pierre Hermé is one of the best pastry chefs in the world, and I was able to get this (and some other ones) recipe from a book. And it’s a great recipe. The thing I love about these biscuits it’s how crumbly they are. Just the perfect match for a nice cup of tea.
These biscuits are really easy to make, we only need to be careful not to over work the dough. And use high quality ingredients, as it’s a buttery dough, it will have a “butter-like” flavor, as well as using a high quality cocoa powder.
I made them with that shape (like a snake) but feel free to make your favorite shape.
Ingredients:
260 grams cake flour
30 grams cocoa powder
250 grams butter (room temperature)
100 grams powdered sugar
3 egg whites(lightly beaten)
1 pinch of salt
Method:
- Preheat oven to 180ºC
- Mix sifted cocoa powder and flour.
- In your standard mixer. Use the Wire whip. Whisk the butter, until soft and fluffy.
- Add carefully the sugar and salt. Keep whisking.
- Whisk in the egg whites and keep whisking.
- Change the wire whisk for the flat beater. Add the flour & cocoa powder, little by little. Just until everything is well mixed.
- Put the dough in a pastry bag with a star nozzle.Make the shapes you want, over a pastry mat.
- Bake for just 10-12 minutes. They’ll be very crumbly, be careful not to break them once out of the oven. Once cooled they will be hard.
- There are the perfect snack. A French biscuit to enjoy or tea (or coffee)
